What the heck is Dan Dan Mien?

Mien = Noodles. Dan Dan = The long pole historically carried on one shoulder of a Szechuan noodle vendor. In a basket at one end were the noodles, at the other end the sauces. His whole kitchen travelled with him so he could prepare your dinner on the spot.

Although originally from Szecchuan Province, China. today you can find Dan Dan noodles throughout China and Taiwan in every street market. These days, you’ll more often find it served from a street cart rather than from the long pole. It is everyman’s food, and a favorite meal for workers after work, or late at night after a night on the town on your way home.

Chef David’s Special today is made with pork, flat wheat noodles, french breakfast radish, pea greens and tahini (hulled ground sesame).
